The family-owned distillery, Fundo y Bodega San Martin is located in the lca valley of Peru, the southern region of the country where most of the grapes designated for the production of pisco is grow.

This expression is a mosto verde pisco which means it is made from musts that aren't fully fermented, such that the yeasts haven't completely converted all of the sugars from the grape juice into wine. This results in mosto verdes having a more silky texture and are more aromatic.

This pisco is made from the 'Mollar' varietal, which is a red grape that is light and fruity like Merlot.

Fruity, multifaceted and complex from beginning to end. Aged for half a century, this Hors d’Age is an ‘Imperial’ example of Jacky Navarre’s ability to produce singular Cognac blends from the Grande Champagne. It has undergone a process unlike most: non-chill filtered, nor colored or boiséd with wooden chips. It is, just as it was meant to be - straight from the barrel.

The nose is aromatic, with notes of exotic fruits such as mango and papaya, alongside ginger, honeyed apples and sandalwood. On the palate, papaya and passionfruit arrive with notes of guava and a hint of eucalyptus. The finale leans into notes of sandalwood, walnut oil and an earthy tone. Bottled at 40% abv.

The tattoo series reflects PM’s experimental treatment of L’Encantada Armagnac through finishing in ex-bourbon barrels. They have been selected and finished by PM Spirits to refine and evolve the spirit’s complexity.

The third release in L’Encantada’s ‘Tattoo Series’ collaboration with PM Spirits is a marriage of six single casks of Armagnac between 13 and 36 years of age before extended finishing in ex-Weller bourbon barrels & final blending. Bottled at cask strength, natural color, un-chillfiltered. The character is dense, with raisin, rancio, oak spice, vanilla, & caramel. Bottled at 52.9% abv.
